Hide a project from the left menu

Actually the left menu show every project I'm member of, but when a project is ended I would like to hide it from the left menu but without leaving it in case I need to access its chat history or information page.

Should this triggering be per user or on project-side, like "Project archived - access only from administration"?
How would I hide these projects? On the administration? On the project information?
How to show a project back?
